Sensory Analysis of Frozen Foods

This webinar is brought to you by the Refrigerated and Frozen Foods Division.
Goals for Attendees:

1. Help participants understand design considerations for implementing a frozen product shelf life study, potential food safety watch outs, and what sensory tools are available to measure changes in food quality to ensure consumer satisfaction.
2. Gain new insights using advanced analytics for real time sensory data collection
3. Participants will be able to have a peek of what the next few years are likely to hold in sensory analysis as the technology continues to mature and blend with other technologies such as chatbots and augmented reality

Sensory Shelf Life Evaluation and Design Considerations for Frozen and Refrigerated Foods: Regan Javier, Sensory Program Manager, Continental MillsAs more and more people are cooking from home, frozen food products and meal delivery products have seen a tremendous rise in sales. Food manufactures and delivery services need to understand the shelf life of their product and how supply chain conditions, packaging, and food safety impact the end users' experience. This webinar will help participants understand design considerations for implementing a frozen product shelf life study, potential food safety watch outs, and what sensory tools are available to measure changes in food quality to ensure consumer satisfaction.

How Smart-Speaker Surveys Open New Doors for Consumer Research: John M. Ennis, Aigora
With the rise of technologies such as machine learning and artificial intelligence, market researchers are excited to gain new insights using advanced analytics. Yet there is an entirely separate path made possible by these technologies, namely that of collecting data in-the-moment, in-context, hands-free, and with low-friction. More specifically, advances in voice recognition, speech-to-text, text-to-speech, and natural language processing (NLP) come together in a single smart-speaker such as an Amazon Alexa or Google Home device. As market researchers, we should welcome the growing penetration of these devices and leverage this powerful technology to collect data in new ways. For example, using smart-speakers, it is now possible to capture consumer opinions in real-time while eating an ice cream cone, preparing a frozen meal, and so on. In this talk, we review current capabilities in this area, including a look at the work conducted to-date comparing smart-speaker surveys to online or app-based surveys. Finally, we discuss what the next few years are likely to hold in this area as the technology continues to mature and blend with other technologies such as chatbots and augmented reality. Attendees will leave this talk excited to supplement their research with these new capabilities.
