Effective formulation of food products requires a fine balance of science, mathematics and product knowledge (quality, raw materials/ingredients, regulations, finances). This webcast will introduce the concept of formulation, describe what it is and what it isn’t, explain its mathematical basis, and illustrate how best to leverage it in the product development process and beyond. The focus will be on meat products, but the principles apply universally.

Learning Objectives:
1. Attendees will be able to get a refresher module on application strategies on product development with respect to formulation, especially meat/muscle food products.
2. Attendees will be able to identify the variables of a product formulation (quality design parameters, raw materials/ingredients, regulations, financial costs) and understand how these can be brought together into a mathematical model that can be used to arrive at the most optimal formulation possible.
3. Attendees will be able to understand how mathematical modeling of product formulations can be applied to enhance the effectiveness of the product development process and how it can feed into product manufacturing in order to ensure consistent product quality.
