Putting IDDSI Into Practice

Learn about the new international standards for thickened liquids and texture modified diets that aim to keep our residents with chewing and swallowing problems safe. Become familiar with new standardized terminology and labeling standards. See how the International Standardized Diet Initiative (IDDSI) will impact senior dining operations when serving and preparing texture modified diets such as ground diets and puree diets. This on-demand training will review the steps to implement IDDSI in senior living communities and lessons learned from those who have implemented already. Discussion will focus on what IDDSI is for, the appropriate food and drink levels, and methods for testing.


Mary Sell is the Menu Services Manager at Martin Brothers Distributing Co., Inc. Mary’s responsibilities include directing the provision of menu services to all healthcare customers and supervising menu production staff. Mary has experience using menu programs to develop recipes and menus, nutrient and cost analyses reports, order guides and other menu reports for customers. Other responsibilities include marketing and training on use of the menu and guest card programs to customers, prospective customers and sales staff, delivering in-service seminars on a variety of dietetic and nutrition topics, and making product recommendations to customers and sales staff.
