Biomarkers of milk fat intake and associated health outcomes
Dairy fat is a rich source of energy. It not only provides basic nutrition to the consumers, but also delivers essential nutrients – such as fat-soluble vitamins, phospholipids, lipoproteins and milk fat globule membrane material – required for normal physiological function. Consumption of dairy fat has not been perceived favorably in the past, which has led to increased market share for dairy fat substitutes. With research suggesting potential negative health impact of consuming trans fats, there is a shift in consumption of dairy fats. New research is being conducted on establishing the relationship between health and biomarkers of milk fat intake. This presentation covers the latest research conducted in this area in the past decade.

Speaker Information
Dr. Robert (Bob) Ward is an associate professor working in the department of food science and nutrition at Utah State University. His expertise lies in the analysis of foods and their effects on health. Dr. Ward completed his PhD in the discipline of Food Science and Technology from University of California-Davis. He has extensively worked on the studying various biomarkers from fat, carbohydrates, and proteins for the benefit of human health. His other areas of interest are Bioactive nutrients, fiber, PUFA, inflammation and gut integrity.
