The plant-based market is growing with high speed. Many companies come to this market: established players like meat or dairy companies but also start-ups and other new players. What they have in common is an idea about the product they would like to bring to the market. What is often lacking is product knowledge. The experienced meat producer knows the process but has no insights on plant-based ingredients and the composition thereof. The startup has a vision but no product or process or no product that fits to existing processes. There are obstacles and challenges in plant-based food developments and some of them can be addressed by revisiting the development process from benchwork to commercialization.
